Each year I process about 75-100 lbs of various sausages..breakfast,
Italian, Cured summer sausage, polish sausage and even pickled
sausage. It is all based on venison/pork combinations. I have the
Sausage Makers Book and it is well worth the price. Most of my
recipes come from his book. It is probably in your local library.
I find that his spice prices are quite high however, so I purchase my
spices from the Con Yeager Spice company (they have a good website and
are very helpful.) If you have any particular sausage in mind, e-mail
me and I will send you info.

You may want to mention the title of the book. "Great Sausage Recipes
and Meat Curing" by Rytek Kutas

There is a sausage newsgroup -- I don't know the name, but you could
find out by Googling, or by checking the (enormously long) list of
newsgroups your isp carries.
