STRAWBERRY COFFEE CAKE
from Southern Living Annual Recipes 1985
1 (8 oz.) pkg. cream cheese, softened
1/2 cup butter or margarine, softened
3/4 cup sugar
1/4 cup milk
2 eggs
1 teas. vanilla
2 cups flour
1 teas. baking powder
1/2 teas. baking soda
1/4 teas. salt
1 (18 oz.) jar strawberry preserves
1 Tbs. lemon juice
1/2 cup chopped pecans
1/4 cup firmly packed brown sugar
In a large bowl, cream together cream cheese and butter or margarine;
gradually add sugar, beating until fluffy. Add milk, eggs and vanilla;
beat
well.
In a small bowl, combine flour, baking powder, soda and salt; add to
creamed mixture and beat until blended. (batter will be stiff).
Spread half of batter in a greased and floured 13x9 baking pan.
Combine preserves and lemon juice; spread over batter in pan. Dot
remaining
batter evenly over preserves.
