Strawberry Shortcakes
2 cups all purpose flour
1 cup milk
2 tbsp. butter, softened
1 tsp. baking powder
1 tsp. orange peel zest
4 tbsp. sugar
2 pints fresh strawberries, sliced
2 tsp. vanilla
Sift flour, 2 tbsp. sugar, and baking powder. Stir in butter, milk,
and orange zest. Mix together until dough forms. On a floured
surface, roll out dough to 1/2 inch thick, use biscuit cutter or glass
top of 21/2 inch diameter into cut dough. Cut 16 pieces and
place dough on a lightly greased baking sheet. Cook for 15 minutes
at 450 degrees or until golden brown. Mix strawberries, 2 tbsp.
sugar and vanilla together and place between 2 biscuits. Top with
whipped topping or vanilla yogurt.
