CHOCOLATE SORBET
Yield: Makes 4 cups or 8 servings

INGREDIENTS

- 3/4 cup sugar
- 2-1/2 cups water
- 2 squares (2 ounces) unsweetened chocolate, chopped
- 1/4 cup light corn syrup
- 1-1/2 teaspoons vanilla extract

DIRECTIONS

In 2-quart saucepan, combine sugar and water; heat
to boiling over high heat, stirring until sugar has
dissolved. Reduce heat to medium and cook 3 minutes.
Remove from heat.

In heavy 1-quart saucepan, combine chocolate and
corn syrup; heat over low heat, stirring frequently,
until chocolate is melted and smooth.

With wire whisk, stir 1 cup sugar syrup into chocolate
mixture until well blended. Stir chocolate mixture
into remaining sugar syrup in saucepan; stir in
vanilla. Pour into medium bowl; cover and refrigerate
until well chilled, about 1-1/2 hours.

Freeze in ice-cream maker as manufacturer directs.
