Glazed Teriyaki Salmon
1/3 cup orange juice
1/3 cup soy sauce
1/4 cup dry white wine
2 tablespoons vegetable oil
1 tablespoon grated fresh ginger
1 teaspoon dry mustard
1 teaspoon lemon juice
Pinch sugar
1 clove garlic -- minced
1/2 teaspoon freshly ground black pepper
4 4 - 6 oz. salmon filets
Combine orange juice, soy sauce, white wine, vegetable oil, ginger,
dry
mustard, lemon juice, sugar, garlic and pepper in shallow dish or
large
zip-lock plastic bag; add salmon filets. Cover or seal, and chill 30
minutes, turning once.
Remove filets from marinade, reserving marinade. Place filets in a
13
x 9 inch pan.
Bake at 450F for 10 minutes or until fish flakes easily with a fork.
Remove from oven and keep warm.
Bring reserved marinade to a boil in a small saucepan; cook,
stirring
often, for 6 - 8 minutes or until reduced by half. Pour over filets
and serve. Serves 4.
