Crab Frittata (1991 Grand Prize Winner)

8 eggs
3 tablespoon butter
1 scallion - chopped
1/4 cup chopped green pepper
1/4 cup chopped red pepper
2 tablespoons grated Parmesan cheese
1/4 teaspoon hot pepper sauce
1/2 pound lump crab meat
1/2 teaspoon salt
one or more ripe tomatoes

Mix eggs, pepper sauce, salt and set aside. In an ovenproof
skillet (if handle is not ovenproof, wrap in aluminum foil) saute
scallion and peppers in butter until soft. Add crab meat, stir
gently, and cover until warmed through. Stir in egg mixture and cook
over low to medium heat until eggs are barely set. Remove from
burner. Cover with sliced tomatoes and sprinkle with cheese. Broil
six inches from broiler for 6 to 7 minutes until cheese melts and all
is sizzling. Let set for 5 minutes before serving.

This dish is tasty at room temperature or cold.
