Recipe Help - Enchilada Pie - CLICK HERE for the Cooking Forum Index

Years ago, my stepmother used to make an enchilada pie that
was quite good. She didn't have an exact recipe, so I created
one based on what I remember of her method and leaving out
things my family doesn't care for (like olives). We think it
turned out pretty tasty, so I wrote my recipe down. Anyone see
any instructions that could be clearer?

BTW, this is a mild pie, as I (sadly) don't tolerate hot foods
well. But feel free to spice it up if you try it...

Enchilada Pie

1# lean ground beef
5 flour tortillas, burrito-sized
10 oz. enchilada sauce
1/4 C. Old El Paso taco seasoning mix (or make your own)
2/3 C. water
16 oz. refried beans
4 oz. green chiles, mild, canned
8 oz. sharp cheddar, shredded
1/4 C. raw onion, chopped

Preheat oven to 350º F. In large skillet over medium heat, cook
beef and onions until meat is completely browned and onions are
tender; drain. Add taco seasoning and water, mixing well. In large
cast iron skillet, spread 1/4 C. of enchilada sauce, reserving the
rest; cover sauce in skillet with one tortilla. Add reserved sauce,
refried beans, and chiles to ground beef mixture, stirring until
well blended. Let simmer for 1-2 minutes, then remove from heat.
Cover tortilla in cast iron skillet with a layer of meat mixture,
then cheese. Continue layering with additional tortillas, meat, and
cheese, ending with cheese only on final tortilla. Bake uncovered for
½ hour, or until center is hot and cheese has melted. Makes six
servings.
