My wife and I are going crazy here...
Forgive me for bringing this up AGAIN; I'm aware the subject has some
accumulated mileage by now...
She swears that using the Foodsaver vacuum gizmo with the marinade jar
produces better tasting foods. I'm still on the fence, but I clearly
recall reading one of Chris Kimball's articles SOMEWHERE wherein he
reports results of some testing they did to prove or disprove this
idea. He clearly stated in the article that in their testing, they
could find NO DIFFERENCE between the vacuum marinated food and the
normal batch.
We have several of Kimball's books here but I can find no article like
this, so I'm thinking it must have been in an issue of Cook's that we
no longer have here.
Anyone recall the article? And, more importantly, is that essentially
what he said?
