Well, the house is progressing. We now have framed walls! We went out
yesterday and looked at cooktops, ovens, and dishwashers (we already have
the clothes washer/dryer, fridge and freezer we want).
We went to a couple of different show rooms after I'd done a fair whack of
research on what I wanted, so I already had a good idea before we got
there. I mostly was looking at the stuff so I could touch it and see how it
really looked in person.
Pending my finding out about who I can get to do service on the items I
want to buy... here are my cooking choices (I won't bore you with details
about the dishwasher :).

I liked the salesman at one place and didn't like any of the others. The
one I liked had chef training, and he said that I would be happier with the
4 series of oven instead of the 7 series (and gave good reasons why that
didn't insult my intelligence or presume too much about me).
So if I'm sure I can get people in to do repairs if they're necessary, I
think that's what I'm getting.
I'm just so excited about this. It's finally all coming together!

If it's at all possible, ditch the downdraft vent and install a high quality
outside-venting hood. Get one that's at least 18 inches deep and has a
remote fan, preferably with continuously variable speed. Now's the time to
do it while the house is under construction. The downdrafts are feebly
effective at best. Take a look at the photo of your cooktop - can you
imagine that vent gathering any vapors from the pan on the front left
burner?
I consider a good vent hood to be an essential part of any serious foodie's
kitchen, particularly if you do a lot of aromatic cooking such as curries,
Chinese stir fries, and the like.

Yeah, what he said! If you can't get a remote fan, then compare range
hoods by how much air they move (cfm) and quietness (measured in
sones).

I'm dealing with the issue now of getting one installed in an existing
kitchen that doesn't have available outside ducting. I've got the
hood (Broan/Nutone Allure III) and the wall cap (special order, the
ones in local home improvement centers were cheesey) at the ready.
The masonry contractor who'll be doing my porch (when?) will break
through the wall for me, I need to call an electrician, but I will
have to do the rest myself. Fortunately there are explicit, animated
instructions on-line.
Hopefully this fall I will be frying fish, onions, and other stinky
stuff (not all at once!) with wild abandon :>

Great looking stuff. Congratulations.
Now, if I may, I'd suggest not relying on a down draft vent system to
remove much in the way of odours, vapour, etc.
My son and DIL just had a whole new kitchen installed and their stove
was a *very* expensive dual fuel model with a down draft vent in the
centre. It doesn't even come close to doing an acceptable job. Also,
with a large pot on the burner(s) closest to the vent, the air flow
tends to pull the gas flames sideways, away from the pot.
They are now in the process of getting quotes to retrofit a proper
hood over the stove. Since the down draft model uses a remote fan,
they are hoping to still use it with the new hood. It's still going to
cost them a bundle.

We're finally replacing the Nutone hood that came with our
kitchen when we bought the house (mumblemumble) years ago.
Since we're not remodeling and I don't want to lose valuable
cabinet space, we looked for a long time until we found an
under cabinet Vent-A-Hood "low profile" that has almost the
exact deminsions of the one we're replacing.... no "cutting"
involved. LOL! We can order 1 to 4 fans with it (48 inch
cooktop). So far, we're thinking 2 at 900 (equivalent) cfm
will be fine, but I'm wavering over a 3rd because I have an
indoor grill. It looks like 4 fans would suck the fillings
right out of your teeth (at the equivalent of 1800 cfm)!
heh! Unlike someone I know, I don't cook with "fire" on my
indoor grill.
(If anyone has experience with this brand and/or style, I'd
appreciate your input)

installer that ONLY installs hoods... so we're going to use
him. He's been with them for 10 years, so we figure he's
seen it all.

Is it a matter of not knowing a decent handyman or do you
really want to do it yourself?

That's good. None of the local distributors of the Broan does

That's it. I did get a recommendation for one a while back but the
guy is so busy that it didn't work out. It's a jungle here for home
renovations! You don't know what I went through to get a mason. I
have friends who are having a total kitchen renovation done. No one
would return calls. The only way they got an architect to give them
the time of day is because they were referred by someone the arch.

work available, the contractors don't want to bother with piddling
things like kitchen renovations.

Not especially. But I've resigned myself to it. With the masonry
work and electric work accounted for, the rest of it seems fairly easy
(she said)! The hood company tech said it was do-able by me. I'll
bribe a friend to help.
