Hi all:
Wanted your opinion as to which chopping/cutting board would be the best
to purchase.
Boos Block 18" X 3" or the Catskill Craftmen 17" X 3".
Both are about the same price. I have heard and seen on tv the Boos....
never heard of the Catskill Craftsmen. Any ideas as to the better quality?
Many thanks, Aileen

18" X 3"? Even for lemon grass I'd want a wider board.

The OP meant the board is 18" square and 3" thick.

I suspect the original poster meant 18 x 18 x 3.

Boos are a LOT better IMHO. Make sure you get the end-grain version and not
edge-grain. (They're easy to tell - the top of an end-grain board looks
like a checkerboard, the top of an edge-grain striped).
What kind of price range are you being quoted? The good Boos blocks I'm
talking about are upwards of $100 for an 18"*18".

For the round version that's probably OK. However, I recommend *strongly*
you get a square one. Square blocks do a much better job of containing
foods that tend to scurry away from you as you cut them (e.g. carrots,
celery, potatoes, etc.) With a round one you're likely to end up with bits
on the floor unless you're only using it for meat or bread. Still, the
square one is more convenient to work with even for these items because
it's less of a hassle to position foods.
As for what makes them better, they use a harder wood, with a much tighter
pack to the bonding structure of the pieces. The individual pieces are
better sized and shaped. The finish is also better. Finally, the square
blocks are slightly larger - not enormously much bigger but every square
inch of surface helps. Performance-wise, the net result of these factors
means you get a board which will survive more continuous cutting and
washing, particularly with large, bony cuts of meat requiring a fair amount
of force and heavy, extra-long chef's knives, or cleavers.
