I'm looking for a method for making Habbas Fritas (roasted broad
beans). I've hunted the Internet with no avail. I've tried deep and
shallow frying, roasting with oil, with and without salt, but nothing
seems to create the results similar to the ones you can buy in packets
(mostly I end up with unappetizing, slightly burnt results). I'm
starting with fresh frozen beans - do I need to perhaps start with
fresh or dried beans instead? should then be slow cooked or at high
temp? Any pointers would be gratefully received.
