Rec Req: Boston Brown Bread and Acorn Squash - CLICK HERE for the Cooking Forum Index

I'm making a *******ized version of baked beans tonight. Yeah,
yeah, it's wrong, it won't be authentic, whatever, we'll like it.
Anyway, I wanted to make Boston brown bread and I have a home grown
tasty acorn squash. So, best recipes (that you've tried and liked) for
Boston brown bread are appreciated. I've never made it, but I have two
recipes for it here that I've been comparing.

I'm also looking for a non brown sugar and butter/maple syrup and
butter/sweet anything squash recipe for the acorn squash. I don't like
it sweet and gloppy, Rich doesn't really like it anyway and definitely
doesn't like sweet and salty mixed like that, but he eats it to be a
good example to the kids, so I want something that has a greater chance
of tasting okay to him as well.

Can't help you with the bread, but I like my butternut squash roasted
(cut it in half, roast) and then scraped out, and mashed, with a little
butter and some curry powder (I use Penzey's sweet curry powder) and
garlic powder. Put it back into the oven for a few minutes in a
casserole, and let the flavors meld. Oh, my.

Can't help with the brown bread. I simply cut butternut squash in half,
scrape out the seeds; place it cut side up in a baking dish. Put some
butter in the middle and sprinkle with salt & pepper. Brush the butter
around the edges of the squash and bake it. 350F for an hour or until a
fork poked in it comes out tender. Place a squash half on each plate and
use your fork to scrape the 'meat' out of the squash. Simple and delicious!

This sounds really tasty! We ended up scrapping dinner last night
for pizza because we didn't have time to finish cooking before
Alexander's open house/ice cream social at school, and we were at Costco
anyway. Got the $8 pizza and topped with oven dried tomatoes and
roasted garlic in addition the the pepperoni. The baked beans will be
ready for lunch today, as well as the bread and I will make the half the
acorn squash like this. The other half I think I will do with garlic,
thyme and olive oil.

Yum! I think I will use this another time, we're getting the
garden's bounty now. :)

I also like corn, carrots and sweet potatoes to be prepared savory
rather than sweet unless they are actually dessert.

Ranee, I totally agree. Baked sweet potatoes are fabulous with just some
butter and salt & pepper. Please don't make them into a pie with
mini-marshmallows LOL Can you tell I like things simple? <G> I do throw
some sprigs of herbs under the corn husks after soaking the ears for at
least an hour in cold water, then toss them on the grill. Yum!
