a variety of breakfast foods he can eat. We're used to making
pancakes and muffins, or pop-tarts and such, but, now he can't eat
them due to the eggs. If you can help me think of some variety of
foods for him (he's 4 y/o and a little picky), I'd really appreciate
it! BTW, I don't serve pork either...

You can serve anything for breakfast that you can for lunch or dinner...
There are no rules for breakfast foods. :-)
At least not at my house!
See if he can eat duck eggs. Many people that are allergic to chicken
eggs can eat duck eggs. Not always, but sometimes! And they are not
really all that hard to get.

Are you using mixes or are you making the pancakes and muffins from
scratch?
If from scratch, use egg replacer in the recipes, and he should be OK.
(stuff has been around for years, and fulfils the binding role in the
recipe) It's available in most health food stores and should be
available in the health food aisle of the regular grocery store.
I've used it with great success.
If you are used to using mixes,Sunset books published a recipe book
for homemade mixes in the late seventies/early eighties. Follow their
instructions and add the egg substituter powder to the dry
ingredients. Then, omit the eggs in theliquid portion of the recipes.
What about cooked cereals? There's oatmeal, cream of wheat, red river
cereal (mixed grains, including rye and flax) and grits. Oatmeal and
grits have instant one packet servings available...

Apples slices dipped in peanut butter
Cheese--cheddar, string, whatever
Bagels with cream cheese (not all contain eggs)
Cottage cheese with fruit
Oatmeal, cream of wheat, etc.
Toast with anything on it

You might want to try some Boca or Morningstar meat products for breakfast. I
use them a lot, not because I'm vegetarian but because they are easy to prepare
quickly, and they're lower in fat. They all taste very different from one
another though. I think some of them are awful. Best so far in my view: the
Boca "chicken" patty and the plainer burger flavors. The organic line all
tastes different and probably would not taste good to a kid, IMO.

If he/you are not following low-carb diets, there are cereals, but I
would stay away from the sugared ones. I used to be particularly fond of
oatmeal in various forms - oatmeal with raisins and cinnamon, for
instance. I like turkey bacon, and chicken sausages, which gives you
the breakfast meat option w/o pork.
You might try yogurt with him as well. Yogurt with fruit in a parfait
might be a way to introduce him to it. Fruit is also a good option - or
fruit and cottage cheese, for instance - kids like dips, so maybe some
cut-up melon and strawberries with a pureed cottage cheese dip (with
maybe some cinnamon and a little sweetener of some kind - I would use
Splenda, to avoid the sugar).
And, as others have pointed out, you don't need to eat breakfast foods
at breakfast. I am fond of chicken salad or tuna salad at breakfast
time.

Aside from the obvious:
Soups, corned beef hash, farina/oatmeal,etc, pizza, buttered roll, meat such
as bacon, ham, etc on a roll, home fries to accompany, toast w/honey or
butter, <I sometimes eat> a turkey sandwich; it doesn't have to be breakfast
food. There is no law that says breakfast foods MUST be eaten at
breakfast-that is something that is instilled in the general public by the
food manufacturers.

Tofu thrown in the blender with the wet ingredients makes an acceptable
substitute egg in muffin and pancake batter. 1/4 pound tofu = 1 large egg.

Thank you all for the great feedback. You did give me some good
ideas. I forgot all about that Egg Replacement stuff. I did see it
in our health food store a couple years ago. I didn't realize that we
could try duck eggs. That might be worth a shot. Also, thank you

There are recipes for couscous for breakfast, also. In fact, I've seen
individual packets of "breakfast couscous", although I'm not sure how
readily available they are.

How about a german breakfast?
Open-faced sandwiches (preferable made from bread made with sourdough
and at least a bit of rye) with margerine/butter and either jam, a slice
of cheese or a slice of a type of cold-cut he likes on top.
Add to it some vegetable he likes raw (sliced tomatoes, cucumbers or
radishes is most common) and it is a nice breakfast.

perfect in palce of butter with slices of radishes and tomato on top
;-)

I have the recipe in an old Frugal Gournet cook book. I'll look it up
and send it to you. For now - and it's been a while since I made this
- any good recipe for a thick polenta will do. Add a pince of salt, a
TBLS of sugar or two and vanilla. Cook up a semi-thick batch. Let it
cool slightly, then pour it into a buttered loaf pan. Cover and
refigerate, overnight, and it'll get nice and firm. The next morning
cut it into 1/4 in. slices, saute in butter, drizzle with maple syrup.
Whipped cream and strawberries (or blueberries, or raspberries, etc.)
go nicely, too.
The exact excipe will be on the way ASAP.

Think outside the box. Why not include foods that you might
serve for lunch and dinner for your son's breakfast. This
is a great way to get rid of left overs. For example, one
of my favorite quick breakfasts is a can of beef ravioli.
