Jerry's Southwestern Meat Loaf
I started to make a regular meat loaf, then I saw a couple of
Jalapeno
peppers laying on the cabinet, found some Enchilada Sauce in the
refrigerator and it sort of went from there.
My wife said it was the best meat loaf she ever ate.
Ingredients
2 lbs of 80/20 hamburger
1 medium onion, chopped
2 Jalapeno peppers, finely chopped*
1 cup dry bread crumbs
1/2 cup Mexican Blend or Cheddar Cheese
1/2 cup Southwestern style eggbeaters (or 2 eggs)
1 cup Enchilada Sauce
1 jar chunky style salsa (Medium or mild, your choice.)
Note: For 1 loaf cut recipe ingredients in half. If you make 2 loaves
you can freeze one of them.
Process
1. Preheat oven to 350 degrees.
2. In a larger mixing bowl mix all ingredients except the salsa.
3. After mixing shape the mixture into 2 loaves on a broiler pan.
4. Brush enough salsa over the top of each loaf to cover it
completely.
5. Bake for 1 hour.
You can use the drippings from the broiler pan to make a delicious
gravy.
* Remember to wash hands thoroughly with soap after handling Jalapeno
peppers or you may be reminded of the Pointer Sisters! (Fire Below)
