I am going to smoke some meat this weekend. (hot smoking at 225F). Can
smoked meat be frozen without a great loss in taste or texture? I will
smoke lamb, MAYBE pork butt (depending on the answer to this
question), salmon, and chicken legs.
Thanks!

The guys on AFB do it all the time so I assume it's still good. They do
meat in large quantities and freeze it constantly.

Why would one want to freeze something that's smoked? Properly smoked meats
should not need freezing.

Absolutely. I would recommend vacuum sealing if possible though.

Experience is a wonderful thing. It enables you to recognize a mistake
when you make it again.

Handy leftover which will store for a while? Sort of like freezing
soups, chili, etc.

We freeze smoke pork butt and it's fine. I imagine chicken legs would be
ok. Not sure about lamb or salmon, though.

He is talking about hot smoked meats, not cure smoked. Big difference.
To reply tot he OP, yes, I do it all the time. It is just as easy to smoke
two briskets and a pastrami as it is to do one. I have great brisket year
round and don't have to freeze my ass off in the winter.
A Tilia Foodsaver is great for things like this. Tastes as good as the day
it was cooked, and I'm talking even two years later.

You're thinking of cured meat (with nitrate, usually, or at least lots of
salt) that is often cold-smoked as well. It's the cure that preserves the
meat at room temperature (although the smoke may help a bit). Hot-smoked,
uncured meat is just like any cooked food.

Smoking meat is a good way of preserving it. Meat was being smoked before
there was refrigeration.
It tastes better, and it lasts longer. Don't worry about it. If you smoke
it and then put it in the fridge, you won't have to worry about it for about
a month.

Not necessarily. Smoking as preservative needs to be a carefully
regulated process. Doing it casually at home is a very different
thing, particularly if it's merely done for flavor.
Don't chance it.
And, yes, smoked meats freeze well. Better vacuumed.

You are confusing smoke curing with smoke cooking. Different processes,
different results. Smoke cooking does NOT preserve.

When speaking of meat preservation, besides smoking, there are other factors to
consider. Typically smoked meat products *require* refrigeration, ie, bacon,
kielbasa, frankfurters, most hams and other pork cuts, etc. Smoking alone does
little to extend the shelf life of meats, far more important is curing and
dehydrating.
To ask if smoked meats can be frozen is a perfect example of a "dumb question".
---= ANYTHING CAN BE FROZEN =---
Will freezing meat, any meat, affect it's texture... YES, most CERTAINLY,
generally negatively.

They sure can. Check out the vacuum sealer on the link below. Semi
commercial for the home, and bags are 70% cheaper than the Foodsaver bags.
Makes the Foodsaver look like cheap plastic from Korea
Enjoy!
