What does everyone do with their sandwich fillings? I do egg and tuna salad
the same as Barb. Anyone else?

I do pretty much the same thing, except I add diced celery and substitute
diced red onion for the green. For variety I sometimes add curry powder
to the mayo.

I sometimes make tuna salad with a good olive oil instead of mayo, and
when I do that, I add basil and oregano. When I do it with mayo, I add
lemon pepper (Penzey's, of course!) and dill, usually fresh and snipped
when in season or when I can get it in the grocery store - and when I
can't, then either a very little dried, or a diced dill pickle. I don't
do my tuna on bread anymore, but over lettuce.

My egg salad is usually a "deviled egg salad," with dry mustard, hot
paprika, and most recently some of Penzey's sweet curry powder. I
usually add a little chopped onion and, if I'm short on eggs, will
stretch it with some ground ham.

I'm trying to keep the calories down so I'll eat one of those 4 oz bags of beef
jerky (about 200 cals) or some fresh fruit or leftover ham or roast beef that I
slice up.

My favorite sandwich-is roastbeef and cream cheese on a croissant-I always add
a little mustard and mayo too and lettuce and tomato. Very yummy sandwich.

Try some of that salmon cream cheese, if you don't have the means to mix
salmon and cream cheese in a homemade way. Yep, that's what I'm sayin',
salmon cream cheese and bif.

Tuna salad made with chopped, oil-packed roasted red peppers,
well dried with paper towels, and a small amt. of finely
chopped onion is delicious. No other dressing is needed.

Hehe. I have to laugh because I did something similar to your
first approach for years. My daughter is more a purist: she just
wants egg, mayo, and salt. Lo and behold, I decided I liked that
better (usually), although I do add freshly ground black pepper to
mine. I also have been known to use Jane's Crazy Mixed Up Salt in
egg salad, but I think I heard the formula for that has changed.

I've found a squirt of Wishbone Balsamic Vinagrette dressing[1] adds a new
dimension to tuna salad.

[1]This is a surprisingly good off-the-shelf dressing. Real handy for
marinades, sandwich spread, etc, where you don't want use your best evoo and
balsamic vin.
