My sister once gave me a jar of green relish from Holt Renfrew. It had a
Royal warrant. "By Apointment To Queen Elizabeth... bla... bla... bla..."
A pseudo gourmet gobbled it up with chicken weiners. At least it looked
good. Here is a recipe for the real McCoy. Note that there is no alum, the
stuff that turns yer brain to cement. If you are planning to go to Heaven,
and, if whatever God you deem appropriate consumes hot dogs or hamburgers,
He/She/It will have relish like this on the side board.
GREEN RELISH
20 Medium Cucumbers
1/4 Cup Salt
4 Onions
2 Green Peppers
1 Cup Pimento (Red Peppers)
4 Cups Sugar
3 Cups Vinegar
1 Tsp Mustard Seed
1 Tsp Celery Seed
1 Tsp Tumeric
Grind cucumbers then mix with salt and let stand 3 hours. Meanwhile grind
onions and red and green peppers. Drain the cucumbers and mix with remaining
ingredients. Bring to a boil then simmer for 20 minutes. Seal.
