Jump to catch frogs... :-)
Ingredients (4 people):
400 grams of rice strain Carnaroli (*must* be Carnaroli!)
400 grams of "cleaned" frogs, not the big ones, the tiny 3" long frogs.
Italian broth (must be done with beef, chicken, guinea fawl and pork)
Presley, slat etc etc,
Start cooking the rice the usual way:
brrown the rice in a soffritto of lard, olive oil and onion.
When the onion ias nearly "whitered" (soft and slightly brown) add the rice
and brown it for fwe minuter.
Add hte frogs (no skin and no head, of course) and brrown them for few
minutes.
Star addin broth little by littlestirring continuously for about 20 minutes.
At hte end the rice must be creamy without too much broth an not too dry.
Add parsley , grana padano (*not* parmigiano reggiano) And serve.
Suggested wine: Barbera from the Oltrepo Pavese
