Someone gave me not one, but three brand new cast iron skillets (various
sizes) for my birthday.
I love cooking and specifically said I needed one to bake an upside down
pear cake recipe of a friend's, but otherwise I'm not sure how these pans
are supposed to change my life (my cooking life).
Rhapsodizing, tips and tricks are welcome. I've already been studying up on
seasoning and care... I'm more interested in creative food ideas.

Once you get used to cast iron, you will never go back.
It's a life changing experience... ;-)
K (who was raised using cast iron, strayed for awhile, then went back
and will never stray again!)

I love my cast iron pans. I've use them since I started cooking, and
that was when I was a kid, about 50 years ago. Things brown better in
cast iron pans than in other fry pans in my experience. I'm not a
fanatic about never washing them or anything like that and they are
still my very favorite pans. I usually just wash them with hot water, no
soap. But if they get particularly grungy I use a bit of soap and a
scouring pad. Some people will get hysterical when they hear this, but
it's never made any difference I can see in the performance of the pans.
I also have a cast iron dutch oven and a dish that turns out better in
this than in any other pot is a beef dush we make frequently. Brown a
chunk of beef in the pan on top of the stove, then brown some onion,
celery and sliced carrots. Toss in some garlic, your favorite seasonings
and a bit of water, then put the meat back in the pot. Cover it and put
it in a slow oven for a couple of hours. Delicious!
