I have always had success with this method of cooking wild duck.

Prick the breast a few times to release the extra fat. Stuff duck with pieces
of onion, orange with peel and celery. (This is just for flavor, and should be
thrown away before serving.) Surface of duck can be rubbed with lemon juice
and onion. I hope you enjoy it.
