I am hosting a small, upscale cocktail party in my home this coming
Saturday. I am leaning towards having the food catered in, but am
considering making a few hors d'oeuvres myself so that it seems a little
more personal.
Please post your favorite hors d'oeuvres recipes in this thread.
Yes, I probably will post some pictures of the party next weekend. My
fans are demanding more details of my social life, so this might be a
good chance to give them what they're asking for.

jumbo shrimp with dipping sauce
CHICKEN QUESADILLAS
TAPENADE Recipe
Nothing is more basic to French olive people than tapenade, the simple and
delicious Provençal caviar eaten with toasted bread. It can be flavored with
garlic, bay, thyme, mustard, and even rum or Cognac. Here, it is done the
old way.
Pitted black olives, salt-cured but unflavored
Anchovy fillets, washed free of salt or oil-cured
Capers
Mild extra-virgin olive oil
Salt and pepper to taste
Mash the olives, anchovies, and capers with a mortar and pestle, marble by
tradition. The rule of thumb is a little more olives than capers and
anchovies, but adjust according to taste. Add very little salt and pepper.
Drizzle in the oil until creamy.

Lil Smokies dipped in BBQ sauce (or you can make pigs in a blanket
instead with the smokies, tear of little pieces of Pillsbury croussant
dough, wrap around the smokies and bake)
A plate full of fried bacon (unorthodox, but your guests will LOVE it;
who doesn't love a plate full of bacon??)
Lil Debbie snack cakes
do not, under any circumstances, substitute canned cocktail weinies or
vienna sausage for the Lil Smokies, I will straight up KICK YOUR ASS

Real simple one for you
Large container of button mushrooms or cremini mushrooms(I prefer the
cremini)
Bob Evans sausage
Shredded mozerella cheese
Remove stems from mushrooms and wipe down the mushroom caps with a
warm damp paper towel.
Fill mushroom caps with Bob Evans sausage
Top with a little cheese
Spray baking sheet with Pam and arrange mushroom caps on the baking
sheet
Bake in a pre-heated 350 degree oven for about 15 minutes.
Serve on a pretty platter or paper plate (Depends upon your yearly
salary)

Crackers with hard salami, get the salami and cut it up and put it on
a plate next to some crackers and some cheese that you cut up as well.
Gardettos, a great snack mix, only problem is the rye chips.
Chex Mix, another great snack mix with many varities without rye
chips, but the original mix does have rye chips, so stay away from
that crap if you can.

There's no "upscale party" being planned; the self-proclaimed ******* is
simply trolling.
OBFood: I tried Alton Brown's method for roast chicken last night, albeit in
a modified form. I made fresh bread crumbs and stirred in some Harris Ranch
Lemon-Garlic Salt and a goodly amount of black pepper. Then I butterflied
the chicken and stuffed the crumbs under the skin. Made a bed of
past-their-prime carrots, celery and onions in my roasting pan, then put the
chicken to bed. Broiled it about 10 inches from the heat (it was a roasting
chicken, so any closer would have burnt the outside before the inside was
cooked). When it was done, I let the chicken rest while I deglazed the
roasting pan with white wine and chicken stock. Reduced liquid considerably,
I think I started with about two cups, and I'm left with about a half-cup.
Jus was done right as the chicken was ready to carve.
Wow. I'm not a fan of white meat; I generally find it too dry and tasteless,
even when it's not overcooked, but this was INCREDIBLE, tender, juicy, and
flavorful. I'm definitely cooking chicken that way again! (Heh...my fans
will demand it!)

Since your initials match those of one of my favorite people on the
planet, I offer you something from my American-Russian kitchen. This
recipe can be dressed up or down as you wish, yet it's not expensive,
and it's quick and easy.
Mix together in a glass mixing bowl:
Finely chopped smoked salmon (1/2 pound/500 grams feeds eight)
Finely chopped medium onion (based on the above salmon figure)
1/8th cup of canola oil
Slices of bread (any will work, but obviously a high quality, sturdy
bread, black bread if you want to be really Russian ;)
Lightly spread softened butter onto bread, then spoon the
salmon/onion/oil mixture on top (as desired)
Cut into squares or triangles and arrange on a decorative plate. You
might want to center the plate (if large enough) with a smaller dish
of marinated mushrooms (homemade or bought).
Serve with a good vodka :) (or not! These canapes go with everything
and the smoked salmon makes for an elegant presentation that doesn't
break the bank).

It is surprising that Directors and Producers don't want to hang out with

and spirited company. I am reminded of the "second harvest" of some of the
Indians in Baja. Remember, they had native corn for thousands of years in
the spring in the same camp site and went to the bathroom (no. 2 that
is... ). Then after the wild corn was gone they moved away.Then in the
summer hellish dry months they would come back and pick though their now
dried excrement all the corn kernels that were not broken down the first
time and they would make bread out of them and eat them again. Only way they
survived.
I think the polite way to say it is "redigestion of evacuated seeds".
Perhaps if you "preloaded" your party treats with a suitable diet that would
"make it all the way though" you could pass the whole thing off as a really
deep in tribute to indigenous cultures? I wonder if the same Hollywood stars
who backed up Treadwell with the kiss a Kodiak bear thing wouldn't love it?
Might have to beat them off your doorstep like flies? I bet there would be
some good jokes told relating too many party guests to flies and flies to
what you were serving.
I have been "second harvesting" one way or another too many years out of my
life so, man, I would pass myself.
