I want to get a grilling machine that let's you dice/chop/slice meat
while grilling. Many Japanese Steak house and some hambuger joints
have them. I understand there are many grilling machines with flat
surface, but they have non-stick coating, so I am not sure if I can
use knifes on them. Where can I get a grilling machine that is OK
when I dice/chop/slice meat while grilling? Thank you in advance.

What's with "machine"? Get a cast-iron griddle. If you don't want to use
it on your range top, get either a one- or two-pot electric "burner".
