We had six littleneck clams left from yesterday. My sister in law was
visiting and we got 18 in case she would dine with us but she had
plans.
So, at this morning Greenmarket, Blue Moon, a day trawler on Long
Island sound, had a codfish. We bought a small piec, a littl over a
quarter pound. We also bought the first ramps to come in this year,
two bunches of very small ramps.
The concert we went to got out after 10, so we were quite hungry when
we got home. I scrubbed and zapped the clams, while Barbara trimmed
and cleaned the ramps and started boiled potatoes.
I put the clams, now open, in a holding dish and put the broth in a
saucepan big enough to hold the small piece of fish. I put in the clam
broth and simmered the [otherwise unsalted] cod in the clam juice.
Barb was sauteeing the chopped white parts of the ramps and a yellow
cayenne in EVOO. Added tomato puree. Cut a bunch of local organic
cherry tomatoes in half an salted slightly. Put the cod in with the
clam broth and finished with tomatoes on top.
About 20 minutes to copletion.

Sauteed leftover veggies from James's pickling experiment (baby onions,
tomatillos) with carrot slices. Added yaki soba noodles and a little
water. Stir-fried until heated through. Served with marinated
(soy/ginger -- commercial) tofu. and gomashio on top. Pretty good, but
I like marinating my own tofu better. The texture of the pre-prepared
stuff is a little weird.

I don't know about that, but you could let your ewe or nannygoat graze
there and make some interesting cheese. :-)
Of course we buy ramps in the City, at least those who want them do.
Some people are put off by the smell. Somebody has to gather them and
bring them in to the Greenmarket. That's just old-fashioned
capitalism.
After being really fed up with winter, we arre happy to pay for every
sign of spring--shad roe, ramps, soft-shell crabs, bluefish (not yet),
and fiddleheads. Also cepes, morels, chanterelles, and black trumpets.
And, just possibly, Caesar's Amanitas. Scry looking, but fantastic
raw.
