I live near a Gordon Food Services store (they cater to small restaurants).
I really like their boxed frozen 1/2 pound burgers which I remove from the
freezer and directly cook on the grill. They turn out fantastic and are
extremely convenient because I don't have to defrost in advance. And unlike
the crap from the grocery store, the frozen burgers separate easily.
This store also sells boxes of frozen steaks of various cuts. Is there any
way to cook these without defrosting? How do restaurants do it (not the
fancy steakhouses, but the ones on the lower end)?

I have no idea of what restaurants, do, but I don't defrost steaks or
chops before I grill or broil them. They come out quite well for me.

I've cooked steaks w/o defrosting and the results have been excellent.
You do have to remember that cooking will take longer to get to the
degree of doneness you prefer. Also, there is a tendency for the meat
to get a little dry on the surface, so I usually put a *little* oil on
the steak as it cooks (butter works well as does a high quality cooking
oil). I grill/broil the steak.
I think there's quite a split of opinion re: whether it's better to
defrost or to cook frozen. IMO, there's less water/juice loss if the
steak's cooked frozen.
