Just about anything you can do with a regular spud, you can do with a
sweet potato. Some examples:
Sweet potato bread, rolls, "PIE", soup, fries, salad, baked, mashed,
hash browns.

Braided Sweet Potato Bread

1 packet Dry yeast
1/4 cup Lukewarm water
1/4 cup Safflower oil
1 teaspoon Thyme
1 1/2 cup Mashed sweet potato
3 tablespoon Honey
1 cup milk
3 cup Wholewheat flour
1 cup Unbleached white flour
1/2 cup Cornmeal
1 1/2 teaspoon Salt
milk for brushing loaves

Combine yeast & water & let stand for 10 minutes. Stir in oil & thyme,
followed by potatoes, honey & milk. Stir gently till mixture is smooth. In
another bowl, combine flours, cornmeal & salt. Make a well in the centre &
pour in wet mixture. Mix together, then knead on a floured bowl for 10
minutes. Let rise, covered till doubled in bulk. Punch down dough & divide
into 6 pieces. Roll each piece into a long coil with hands, about 1 inch in
diameter. To make each loaf, braid 3 coil s & pinch ends together. Place on
a floured baking sheet, cover with damp cloth & let rise till doubled in
bulk. Brush tops with soymilk & bake in a preheated 350 F for 40 to 50
minutes till tops are golden.

SOUTHERN SWEET POTATO BREAD (MAXINE)

1/4 cup margarine or butter -- softened
1/2 cup brown sugar -- packed
2 eggs -- lightly beaten
1 cup mashed sweet potatoes
3 tablespoons milk
1 teaspoon grated orange peel
2 cups self-rising flour -- see pantry note
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 cup chopped pecans
***orange cream spread***
3 ounces cream cheese -- softened
1 teaspoon orange juice
1 teaspoon grated orange peel

1. In a mixing bowl, cream butter and sugar. Add eggs; mix well. Add
sweet potatoes, milk and orange peel; mix well.

2. Combine flour, allspice and nutmeg; add to creamed mixture. Mix until
combined. Fold in nuts. Pour into a greased 9-by-5-by-3-inch loaf pan.
Bake at 350 degrees for 40-45 minutes or until bread tests done.

3. Cool in a pan for 10 minutes before removing to a wire wrack. Cool
completely.

4. In a mixing bowl, combine spread ingredients; beat until smooth. Serve
with bread.

PANTRY Note: 2 cups of all-purpose flour, 1 Tbs. baking powder and 1 tsp.
salt may be substituted for self-rising flour.

Notes: Sweet potatoes or yams are an excellent source of vitamins A and C.
They also add fiber to the diet. Sweet potatoes are very versatile. They
can be steamed, baked, pureed or fried. They can be used as a vegetable or
served as a dessert. And yes, they can be made into breads.

1 tablespoon ground cinnamon
1 tablespoon vanilla
6 eggs
1 cup heavy cream
2 tablespoons flour
Fresh sprigs of mint
Whipped cream in pastry bag
1 cup chocolate sauce in squeeze bottle
Powdered sugar

Preheat the oven to 375 degrees F. In a mixing bowl, whisk the mashed sweet
potatoes, sugar, cane syrup, cinnamon and vanilla together. Whisk in the
eggs, one at a time. Whisk in the cream and flour. Pour the filling into
the shell. Bake for about 45 minutes or until the pie is set. Place a piece
of the pie in the center of the plate. Garnish with pie with mint, whipped
cream, chocolate sauce and powdered sugar.
Yield: 8 servings

3 tablespoons sugar
5 cups flour

Blend potatoes with melted margarine. Dissolve yeast in 1/2 cup
warm water. Combine potatoes with egg, salt, sugar & yeast
mixture. Add flour alternately with remaining 3/4 cup water, mixing
until well combined. Turn onto a well floured board & knead.
Place in a bowl coated with Pam. Cover & allow to rise 1 hour in
a warm place. Divide dough into 24 pieces & form into rolls.
Place on a baking sheet coated with Pam & let rise in a warm place
for 30 minutes or until doubled in size. bake at 425F for 15-20 minutes.

1 Cup Small White Onions -- frozen, thawed
1/4 Cup All-purpose Flour

1/4 Teaspoon Nutmeg
1/4 Teaspoon Dijon Mustard
1 Tablespoon Low-sodium Soy Sauce
1 1/4 Pounds Chicken Breast, No Skin, No Bone, R-t-c -- cooked

3 Cups Frozen Mixed Vegetables

Preheat oven to 350 degrees. In a bowl, combine mashed sweet potatoes, 1/3
cup evaporated skim milk, salt and pepper. Stir to combine; set aside. In
a large skillet over medium high heat, cook bacon 4 to 5 minutes or until
crisp, turning at least once. Remove bacon from skillet and drain on paper
towels. Discard all but 1 teaspoon of fat from the pan. Add garlic,
mushrooms and white onions and cook over medium high heat 4 to 5 minutes,
stirring occasionally, until onions begin to brown slightly and mushrooms
have softenend. Sprinkle flour over mushroom mixture and cook, stirring 1
minute. Slowly add remaining evaporated skim milk, stirring constantly to
avoid lumps. Add chicken broth, cumin and nutmeg; bring to a gentle boil
and cook until slightly thickened, about 1 to 2 minutes. Remove skillet
from heat and stir in mustard and soy sauce; set aside. Crumble bacon into
a bowl; add chicken, mixed vegetables and sauce mixture and stir. Pour into
a 1!
3X9 inch baking dish. Spread the sweet potato mixture evenly over the top
of the dish to cover. Bake 25 to 35 minutes or until thoroughly warmed.

Sweet Potato Souffle

1 cup brown sugar
1 1/2 cups crushed cornflakes
1 cup pecans -- chopped
1/4 cup butter -- melted

Mix first 6 ingredients together and place in buttered 2 quart baking dish.

Mix all topping ingredients very well. Place on top of souffle before
baking.

Bake with a lid on for 25 minutes at 350 degrees. Bake an extra 10 minutes
without the lid. Serve hot.

FILLING:
2 tablespoons unsalted butter
1 cup cooked and mashed sweet potato
2 egg -- slightly beaten
3/4 cup brown sugar
1/2 teaspoon ground ginger
TOPPING:
1 pint whipping cream
3 tablespoons confectioner's sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup dark corn syrup
1 cup evaporated milk
1 1/2 cups coarsely chopped pecans
1/4 cup praline liqueur or pecan halves soaked in frangelico

TO PREPARE PASTRY: Prepare pastry and chill as directed in following recipe.
Preheat oven to 375F. On a lightly floured surface, roll out chilled pastry
into a 1/16-inch-thick circle. Gently roll pastry around rolling pin; unroll
into a 9-inch pie pan. Gently ease pastry into bottom of pan; pat against
side. Do not stretch pastry. Trim off and discard excess pastry. Flute
edges, if desired, Refrigerate until ready to bake.

TO PREPARE FILLING: In a large bowl, stir butter into sweet potatoes. Add
all remaining ingredients except pecans; blend well.

TO ASSEMBLE PIE: Pour sweet-potato filling into prepared pie crust; sprinkle
chopped pecans evenly over top. Bake in preheated oven until filling is set
and a knife inserted into center comes out clean, 40 to 45 minutes. Cool in
pan on a rack to room temperature before slicing. Prepare topping. To serve,
top with topping. Top with pecan halves. Makes 8 servings.

TO PREPARE TOPPING: Combine cream, powdered sugar and liqueur in a large
bowl. Beat with an electric mixer until large, soft peaks form. Refrigerate,
covered, until ready to serve.

Party Pork Chops 'n Yams

1 8-ounce can crushed pineapple -- drained, reserve liquid
3 tablespoons maple syrup
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/3 cup black walnut pieces

Melt butter in large skillet. Brown pork chops over medium heat. Place pork
chops in 13 × 9-inch baking pan. Combine yams, pineapple, maple syrup,
cinnamon and salt; mix well. Spoon mixture onto pork chops. Sprinkle with
nuts. Pour pineapple liquid into pan. Bake uncovered at 350ºF for 25-30
minutes or until yams are thoroughly heated.

Bake 'em. Poke holes in the top with a fork. Rub them with a little oil,
butter or margarine and sprinkle with salt. Into the oven they go at 450F
for an hour. Treat them like more moist baked potatoes. Delicious!

Thin slices and saute over low flame in butter.

Sweet Potato Souffle

Amount Measure Ingredient -- Preparation Method

6 medium sweet potatoes
3 Tablespoons butter
2 eggs -- beaten
1/4 cup sugar
1/2 teaspoon salt
1/2 cup light brown sugar
1 teaspoon lemon extract
1/4 cup raisins
1/4 cup coconut
cinnamon

Cook, peel, and mash the sweet potatoes.

Add butter and eggs to potatoes and beat until light and fluffy.

Add all the remaining ingredients, reserving a little coconut.

Place in a buttered 2-quart casserole; sprinkle with cinnamon.

Bake at 350°F for about 30 minutes.

A few minutes before removing from oven, sprinkle with remaining coconut
and brown.

Variation: add a top layer of tiny marshmallows and brown

We have a hard time stopping the neighbors from devouring 100% of our
sweet potato chips. We use a very sharp "vegetable peeler" to make thin
slices off the patates, then deep-fry them in canola oil, and salt them
wehen they come out.

Tasty, quick, and fun. Put them in vacuum bags and they last a while,
too, in theory.

I like to partially cook a sweet potato in the microwave, then slice
and brush with butter and curry powder. I finish them on my George
Foreman grill until they are brown on the outside.

almost cooked. Dump out the water. Add one thinly sliced onion, a
couple small globs of butter, a couple tablespoons of brown sugar and a
couple cranks of black pepper. Stir till coated and potatoes are
cooked.

I also like to nuke sweet potatoes, then cut in half and score lines
into them. Melt some butter and brown sugar in the microwave, then add
some pecans. Drizzle over the top of potatoes and pop them under the
broiler for a couple of minutes.

2 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/3 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro leaves
salt and freshly ground black pepper to taste
1/2 medium-size red bell pepper, seeded and cut into 1/4 inch dice [See how
on streaming video]
4 scallions, white and light green parts, finely chopped

Place the sweet potatoes in a large saucepan and cover with water. Bring to
a boil and cook until just tender, 7 to 10 minutes (don't overcook or your
salad will be mushy and falling apart.) Drain and transfer to a large bowl.
While the potatoes are cooking, make the dressing. Whisk together the olive
oil, lime juice, chili powder, cumin, cilantro, salt, and pepper in a small
bowl. Add the red bell pepper and scallions to the potatoes and toss with
the dressing. Season again with salt and pepper. Serve warm or refrigerate
and bring to room temperature before serving.

NOTE: I always roast the sweet potatoes instead. It makes a world of
difference in this recipe!

Makes 6 servings.

Hot Coarse Mixed Root Veg. Mash.

Dice sweet potatoes, carrots too if you like (in fact any mix of root
vegetables is great for this).

In a large pan, sauté onion, garlic, green chiles in butter and olive oil,
with plenty of black pepper and some salt.

When softened add the vegetables and *barely* enough liquid to cover, and
cook until almost tender enough for a normal mash, but with a little bite
still.

Drain saving the liquid and set aside, keep warm.

Add the liquid back to the pan and reduce down to about 1/4 to 1/2 of a cup
(for ~1lb starting veg.), add back the vegetables with the pan still on the
heat, and mash keeping it fairly coarse, adding grated strong cheddar to
taste (not so much as to make it really cheesy! Keep it quite subtle for
this one), 1 - 2 tsp ready made yellow mustard, and more butter if you wish,
taste and adjust seasoning if desired.

I like this served with some good grilled pork sausages personally, but it
goes great with steaks/chops of all kinds IMO!

I must say I agree that they are great in soups! My wife makes a gorgeous
sweet potato soup with nothing but sweet potatoes, leeks, pepper and quality
vegetable stock, sometimes a little cream too. It's bloody dreamy!

Superior to fries made with regular spuds any day. :-)

Yam pancakes. Make like regular potato pancakes, just
substitute yams!

Works either starting with mashed, or grated like hash browns.

By nuking instead of baking, you're totally missing the sugar
development that comes from the long cooking time.
