Apple-faced Ham

1 large Ham slice ; lean
3 ea Apple ; tart
1 cup Apple cider
1 teaspoon Cornstarch

1 ea large or 2 small lean ham slices, : -prepackaged or leftovers 3
ea or 4 tart apples, sliced (Macintosh, : -Empire, Cortland) 1 c apple
cider or less, down to 1/2 cup 1 t cornstarch Using a nonstick
skillet, lightly braise the ham slices on both sides to desired
doneness (2-3 minutes per side). Remove ham to heated plate, and pour
off any fat. Add sliced apples and a small amount of the cider to the
pan, just enough to keep the apples from sticking or burning. Cook and
stir apples on medium heat until soft and slightly thick (about 10
minutes). Add remaining apple cider and cook a few minutes. Stir
cornstarch into a small amount of cold water, stirring a little at a
time into the apple mixture, to desired thickness. Push apple slices
to one side, and put ham slices back in pan. Cover with apple mixture
and heat for another minute or so. (I like to arrange the apples into
a little picture!) Serve with small creamed potatoes and brussels
sprouts.
(NOTE: this recipe is also VERY adaptable for vegetarians...simply
substitute grilled tofu for the ham.)
