Howdy folks,

I have never been on this message board before, and the first time I am
I'm begging for assistance. Let me just say that I recognize what
horrible ettiquette that is. I was raised better, believe you me.

Because this is a lively community of foodies, I'm hoping that just one
person out there owns or manages a restaurant and can give me wholesale
pricing information for a recipe I need to cost out for restaurant
management class I'm taking. My entire final project pretty much rests
on my being able to get fairly accurate wholesale information.
Unfortunately, wholesalers NEVER give out their pricing information
unless you actually have an account with them, go through a credit
check, present a business license, etc.

I wouldn't be so desperate except that I left this part of the final
project until the LAST MINUTE. My project is due MONDAY. I thought my
source for all the other info I needed ( a local restaurant owner) was
going to be able to get it for me, but she had to leave town
unexpectedly. So if anyone out there can help - PLEASE HELP! I would
be eternally grateful, plus you can have whatever recipes or knowledge
you might like from a culinary arts student:

I need the prices and amounts (to the smallest case) for
butter
button mushrooms
onions
flour
chicken stock
white wine
bay leaf
nutmeg
cornstarch
heavy cream
salt
white pepper
fresh parsley

What is it with young people today (and sometimes their parents!), wanting
other people to do their homework for them? Color me less than sympathetic.
I do not find your characterization of food wholesalers credible. From a
business point of view, any wholesaler would *want* to prove to small
businesses that they can provide the best possible price and service. For
example, if I were planning to open a restaurant, I would expect to include
some projection of food cost in any business plan I might write. Those
numbers would have to come from somewhere, i.e. a food wholesaler in my
area.

And since we've no idea where in the world you are -- after all, this is
Usenet and therefore an international group -- any prices people might
provide here would be useless to you. Costs in Denmark, where I now live,
versus San Diego, CA, where I come from, are significantly different (and,
generally, signficantly higher).

If you're unwilling to contact your instructor and explain your dilemma (and
ask for an extension on your project), I suggest you call one of your
classmates to see how they've handled the food costing issue. Or go to your
local Costco (assuming you're in the US) or other such store, and hunt down
some prices. Or, and here's an interesting thought, if your cooking school
operates a restaurant, go see if they have a price list they'd be willing to
let you use.

Certainly not all. But this scenario does come up occasionally on this ng
and it's usually accompanied by "this is due MONDAY!" and posted on
Saturday. Heh. It's similar to the posts from folks who have 8 people
coming for dinner and have no idea how to prepare the meal they promised
them or the food item they purchased. Suddenly they are in panic mode and
posting here for methods/recipes with only 6 hours to go before company
arrives. Gimme a break.

I agree with Jacqui's statements; how did the OP's classmates come up with
this information? What did the OP do (other than pretend a wholesaler
wouldn't give out pricing unit info to a student without first having an
account or a credit check, which I find hard to believe)?

For the record, I turned 38 May 1. My mother has a cancerous tumor in
her knee which was diagnosed about a month ago. Between helping her
out and working, I have found myself putting a lot of things on the
back burner. If you don't believe me about wholesalers not giving out
pricing information, then log on to www.sysco.com, or www.ledyards.com,
two prominent wholesalers in my area (which is Santa Cruz, CA). Costco
is not a true wholesaler. Believe me, I wouldn't be randomly asking for
this information on a message board if I wasn't at the end of my rope.
The three classmates I'm friends with chose bakeries as their project -
I didn't. The information I was asking for isn't anywhere CLOSE to
what I need to submit for this project - it's just raw data.

If you don't have the data, or you don't know what you're talking
about, fine. I didn't really need to feel crappy about asking.

So sorry to hear about the problems. My father had surgery a week ago (he's
80) - bypass surgery in his legs for femoral artery blockages. He's also a
lymphoma survivor from a couple of years ago with full chemo and radiation
therapy.

Now, let me tell you, in my experience, Hardins-Sysco (which is a major food
distributor to restaurants in the U.S.) won't balk at telling someone,
anyone, what their price per unit would be. They would consider this an
opportunity to find potential customers who are graduating from the school
who might open a restaurant and use their services.

I'm sorry to hear about your mother -- I'm sure it's a stressful time for
her, you and the rest of your family. If you have too much on your plate at
the moment, then you really should consider getting in touch with your
school and/or instructor and make other arrangements until you have more
time available. If you're the main caretaker of your mother and she's
disabled, you have certain legal rights which may enable you to postpone
completing your current class/project until you have more time.

As a matter of fact, I *did* check Sysco's website before my earlier post.
Nowhere does it say that they won't provide you with prices (although no,
they're not posted online), but you do need to actually *contact* them. Did
you call and explain what you needed?

I'm aware of that, but they are -- or *used* to be -- cheaper than full
retail and I know a lot of small restaurants in San Diego actually do shop
there.

And the rest of your classmates? Did you ask people other than your
friends? Have you checked with other restaurants? Surely there's more than
one in Santa Cruz.

Ooh, that hurts, I must not know what I'm talking about because I can't give
you your answers. I made several suggestions which *might actually help
you*; that they're not the answer you *want* is really not my problem.

Your choice. There are tools readily available to help you, if you'll only
use them -- try thinking outside the box and solve your own problem, or
continue to feel like a victim.
