Making chicken with green peanut sauce this weekend. I've eaten my
share of roasted peanuts, and I've eaten my share of boiled peanuts, but
I never would have thought a green peanut would be so hard to shell.
Damn! They're almost as time consuming as fava beans! Hope they're
half as good!
This may be my first and last green peanut sauce.

Okay, I wanna know how to boil peanuts. I had them years ago and I loved
'em. I've looked it up on the 'Net. I got some good info. At first I
thought they were pickled. That was not the case.

Okie doakie. Listen close 'cuz this is hard.
Take a pot big enough to hold the peanuts you want to boil and enough
water to cover them. Put water and peanuts in pot, add lots of salt.
Boil for about an hour - until shells are soggy and peanuts are "done" to
the taste.
Use raw peanuts in the shell. Keep them covered in the cooking water. Cook
at a gentle boil until done.

After they've been boiled 'til tender, they can also be spread in a single
layer on baking sheets and slowly baked until dry. Salted peanuts in the
shell to crack open and eat!

A bit different than most, but we like 'em
4 lbs green peanuts
5 qts. water
1 cup salt
4 tb onion powder
1 head garlic....well smashed
2 tb black pepper
4 Jalapeños
2 tb Cayenne
4 tb paprika
1/4 cup Worchestershire sauce
1 bottle (4 oz?) liquid smoke**
All ingredients go into the pot and are boiled until done. This will be
1 to 3 hours depending upon the moisture content of the peanut. Once
done, remove from heat but let them sit in the water at least 30
minutes... peanuts don't really pick up flavor until they are done.
Drain and eat!
