Shrimp Toasts - CLICK HERE for the Cooking Forum Index

8 whole wheat bread slices
8 ounces frozen peeled and cooked medium shrimp -- thawed
1 egg white
1 teaspoon minced fresh ginger
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons minced scallions


Preheat the broiler.
Cut each slice of bread in half diagonally and arrange on a large baking sheet.
In a blender or food processor, combine the shrimp, egg white, ginger, garlic, salt and pepper.
Process until smooth, scraping down the sides of the container as necessary.
Transfer to a medium bowl.
Stir in the scallions.
Spread on the bread.
Broil 4 inches from the heat for 3 minutes or until golden brown.
