What professional knife set to buy? - CLICK HERE for the Cooking Forum Index

Hi,
I just entered a cheff school and as you can tell I'm new on this and I
would like to start in the best way, so I'd appreciate any piece of
advice about which professional knife set I should buy.

You're already in deep doodoo... it's "chef school". If it's any kind
of worthile school they would have apprised you about what equipment to
obtain.

The school will tell you which knives they recommend.

The school should give you a list of recommended knives.

Study the proper way to hold the knife then look - feel - test - the balance on
each of the different knives. You'll find a difference in balance. Go with
comfort.

Best and set don't really go together. If you want to
get a set, think of it as a starter until you learn
what your personal preferences are. Once you've
developed your own set of preferences then look at the
range of models available and buy them one at a time
not in a set.

A quarter from now look at your start set. The one
that's seen the most use, you'll know what is good
and bad about it. Go get one that's excellent enough
to get it right.

A quarter later, do it with the next most used one.
Lather rinse repeat.

LOL there are no 'experts' in this group. Listen to what the school
tells you to begin with. As you learn to cook, you might find you like
other knives better. Makes more sense to buy the knives one at a time,
since sets very rarely contain the best examples of each type of knife.

There isn't any such thing as a chef school where its students don't
know which knives to choose... a chef school would be a very advanced
culinary institution, were you really attending chef school you'd be
telling us which knives.

The cheff skool will tell you their preferences.
For yourself, hold various ones, feel them in your hand, use them, then
decide.
