Very interesting, but in your link there isn't the photo of the whole
animal!
Anyway I saw in my american enciclopedia and I've found all the cuts of meat
pictured in the picture of the whole animal.

I have an old book called "Cutting up in the Kitchen" by Merle Ellis,
which has line drawings of the carcasses, and various cuts. My
grandson calls it the "cow book". Of course, the first drawing he
turns to is the one of the beef carcass and then he wants to leaf
through it carefully, in the same manner he reads his dinosaur books.
