Today I have made eggs pasta (fettuccine) by hand. I have seasoned it with
Boletus edulis (italian people call these mushrooms "Porcini").

Your meal looks wonderful Pandora!
We have Porcini in Australia and I love them. They are a bit expensive so
tend to be used sparingly. One of the best meals I ever ate was in
Melbourne's best (and priciest) Italian restaurant called Scusa Mi. It was a
huge plate of risotto made with porcini mushrooms (and duck?). None of us
could finish and we are all hearty eaters. It came with a beautiful rocket
salad which I've been craving for a week or two so today I finally found
some nice fresh rocket at the local veg shop. Maybe I'll cook up a chicken
and asparagus risotto tomorrow for lunch with a rocket salad on the side.

Also here in Italy they are very expensive, but today they were for free :)

I imagine you are in spring, there in Australia: we can find fresh asparagus
only in spring here! I have never eaten risotto with asparagus and chicken.

I haven't seen these types of mushrooms here in Canada. The biggest
I've seen are Portabello mushrooms and they don't look like yours.

Ohh! Good! We can find fresh mushrooms only in 2 periods of the year: May
and september-october if there is a raining and hot weather.
In other period of the year, we can use frozen porcini or dried porcini. of
course the fresh ones are better!

Oh! Margaret is very simple, I will post as soon as possible.
For fettuccine it is better have the pasta maker, but if you haven't you can
cut them by hand.

The mushroom of the photo are called Porcini. The Portabello that you say
are very similar to our "prataioli" (the italian word means mushrooms which
grow in the grass).
You can make fettuccine with every kind of mushrooms, so you can use
Portabello instead of porcini for this recipe. Porcini are very tasty. But
if you can find dried Porcini, you can mix dried porcini with portabello and
you will have a good dish in the same way.
Can you find dried porcini in your shops?

Maybe in the larger cities. I'll ask DD to look for them for me.
Around here the selection of any neat foods is very limited. I live in
a very small rural area. I can get a good selection of local produce.
I have to drive to the nearest larger town to get mushrooms because the
mom & pop grocery store seldom has them :(

I always make a bunch. I tie a string from one cabinet to the other
across the room and hang coat hangers for the pasta to dry. It's a
circus in my kitchen on occasions! :D

The nearest big city is Toronto but it's a fair distance from us :(
It's a long day trip so we usually stay overnight at DS's. I like
Toronto especially the Chinatown section. DH is especially fond of the
bbq pork in Chinatown. You can get all kinds of neat foods there. The
grocery stores are to die for and that's for the specialty foods and
goodies you can get. I'm not into pre-made goodies or commercially
canned or frozen stuff but I love the range of produce and fish I can
get in Toronto. DD lives near Toronto too. When we visit I'm always
amazed at the selection of foods available! If I want something
different here, I either grow it if produce or barter with one of our
hunter friends for wild meat.

You're breaking my heart with these awesome pictures! We get imported
porcini (ceps) in the U.S. I've never seen the non-imported variety ever.
When fresh they are extremely pricey. Mostly I buy them dried and
reconstitute and add them to sauteed domestic mushroms to add a bit of their
taste. I've got a serious craving for grilled porcini (ai ferri) but can
rarely get that outside of very pricey restaurants in the U.S. Actualy they
were never *cheap* even in Italy. I used to live two blocks from the Campo
dei Fiori in Rome - at a time when I had no kitchen available to me. I
would kill to have that produce, fish, meats etc. available to me now. Like
I said you are kiling me with these photographs (and that fact that you can
saunter into the woods and pick porcini can't even be discussed in polite
conversation ;-)!) - please keep them coming!!!

Ohhhh! Is a beautiful idea! very often I don't use to hang the pasta. I put
directly on the tray. in this way Fettuccine comes a little curled : they
are gooder like this because they suck more sauce.

We are having some problems with asian chickens and food in general, this
period.
Do you mean that chinese sell also european products?

I LOVE porcini! They are expensive though. I don't get them fresh,
only dried - but they are sublime and add a huge flavor impact to any
dish.

No not really. There is a whole section of Toronto known as Chinatown.
They have awesome restaurants with really inexpensive prices. Then
the Chinatown strip has the neatest things and not just food. I don't
think they sell very European things but the goodies they sell are well
worth it. Youngest DS has vivid memories of his first visit there.
There were a couple of drunks laying on the street and DH casually said
be careful you don't step on David Suziki. Now David is pretty cool and
I have several of his books autographed by him. DS is an ex-geneticist
and not thought of well in the field of genetics but he has done a lot
of good for science in general. He is a fellow Ontarioian having grown
up in Leamington Ontario. Anywho, DH doesn't value his scientific
contributions. There is a really neat herbal shop that I stock up in
and anything wicker is dirt cheap. DS discovered the sweet smells of
rotting veggies in Chinatown and you should have seen his eyes pop when
he saw the ducks, geese, pigs, and chickens hanging in the windows of
shops. I don't think he cared a lot for the hussle and bussle but we
love it there. In hindsight we shouldn't have introduced them to
Chinatown way past their bedtime. We were wandering around Chinatown
near midnight. Mind you we only get there a few times a year. Another
great Chinatown to visit is in Montreal. It's wonderful!

In Toronto? I doubt it! Us Canadians are a rather peaceful type so
wandering around Toronto in the wee hours of the morning is not a real
problem. The most you will see is drunks passed out.

Morning smells better :) But going there in the evening gets you really
great deals. Then late evening you get really good meals. DH & I along
with DS & his wife ate at this one Chinese place. We spent $18 and were
stuffed for the 4 of us. Can't be beat!

I was there for 11 months in the late 1970's and then for 2 months a year
later. I travel to Italy every three or four years but haven't been back to
Rome in almost 10 years.

Keep up the good work with the photo's! I enjoy seeing what
people are making. When my parents travel in the U.S they
send pics of their dining experiences and it is quite a eye
opener as well.
Gives me some good ideas for new stuff to make and ideas for
presentation. It is amazing the depth of experience this
group has and the many different countries represented.

yellow ochre dotted with white. Rustic and rough effect. Then I have painted
also furniture: from white to wood color. It was a big effort because the
wood color didn't attach on white, so I had to pass 4 hands of paint.
