- my butt in gear! We're taking DS fishing this afternoon and I still
have a hamper of tomatoes to turn into salsa. For some reason, I'm
dragging my butt and just can't get motivated enough to prepare the
tomatoes. This is a very nice salsa recipe originally from Select Homes
several years ago. I can about 40 jars each year because the kids shop
at home ;) I adjust the heat with the types of peppers I use. This
year the first batch will be with banana peppers, jalapeno peppers, and
cherry bombs using roma tomatoes. I have some ripe mellow yellow
tomatoes that I thought I would try a mix of them with romas for a small
batch with less heat. I thought the yellow would look rather pretty
mixed with the red. The very best batch was the one made a few years
back using habernaro peppers! Sadly, I don't have any habernaros this
year. Maybe DD can find some for me and bring them down her next visit.
Ok - I really need to get motivated here!

I would, but I can't! I greatly admire all you growers and canners but I
have a hard time getting myself to start a load of laundry let alone turn a
hamper of tomatoes into salsa :)

Actually a 3/4 bussel and I *hate* peeling them! I'm, taking a break
for peeling but have all the other veggies chopped. I love salsa but I
hate making it. I can find more reasons to procastinate than anyone.
I'm thinking right now a half magnum of rye - that's whiskey to you
Usonians - might help get the job done. The result might be a rather
hot salsa but who cares :)

I'd vote for the rye! At least you won't care. Do you blanch the tomatoes
then dunk them in an ice bath so the skins slip off? I've learned that much
about things like canning tomatoes or making sauce from this newsgroup :)

Or she could actually mean the laundry hamper. Contadina had tomato
fields in the central valley of CA, near Lemoore (south of Fresno).
After the mechanical harvesters went through the fields were open to
"gleaners." We would drag every basket we could find, even plastic
laundry hampers with us to use for tomato gathering. The Armona
Community Cannery would gear up and the cost of the jars, a small cash
fee, and 6 jars of canned tomaotes, the local ladies would put up all
your tomatoes for you.

nah....not to all of us. Scotch was always scotch, rye was rye, bourbon
was bourbon, etc. I don't remember anyone ever asking for just whiskey
because they would get greeted with "Rye, scotch, bourbon, Irish?" It
was always rye and ginger(ale),scotch and soda, scotch and water, etc.

No not a landry hamper. Here a hamper is about 3/4 of a bushel. So far
I've done 4 1/2 of them so am getting tired of tomatoes. Last year I
did 10 of them so I have a ways to go. I have salsa to finish that
should take up 2 hampers and juice and perhaps more tomato paste as well
as chili and spaghetti sauce for lasagne left. I don't mind the sauces
and juices but I really hate peeling and coring tomatoes. I use a food
mill for sauces and juices but for chili sauce and salsa I have to do
everything manually :(

Wow, that sounds great! A fun day, then canned tomatoes, what's

Yeah, mom taught me about blanching tomatoes to peel them. :-)
The skins practically fall off if you do it right.
As tough as the skins of some home grown vine ripe tomatoes are, I often
do that before putting fresh ones in recipes, even if it's just a salad.
