here the recipe:

BUTTERFLY with ZUCCHINI, SPECK AND SAFFRON

Category: First dish
Nb persons: 3

300g pasta - butterfly
3 zucchini - small and cut in round slices(5
-millimeters thickness)
100g speck (smoked ham) - 1 thick slice, cut in
-little stripes.
1/2 cup olive oil - EVOO
1 little onion - chopped
2 tsp salt - For zucchini's sauce
1tsp black pepper - powder
1 sachet saffron

FOR THE ZUCCHINI SAUCE:
Put the oil in a large fryingpan; when it is hot put the slices of zucchini
and fry them till they become nearly brown but not burnt.
When they are ready, dry on a kitchen paper and salt a little..
In the same oil, fry speck and onions (just 2-3 minutes). Turn off the fire
and add the zucchini, salt pepper and saffron.
Cook butterfly "al dente" in boiling and salted water , dry and season in
the frying pan with zucchini and speck. If you want, put other saffron or
paprika powder over your dish.
Nb: if speck is hard. Boil it for few minutes in a pan full of hot and
boiling water.

I wonder how this would be if you added cream and/or red bell pepper strips.

I think I like "Butterfly" better than either of the others :)
