Here is a really nice item one of my freinds taught me how to make!
It works very, very well and they always dissapear at family get
togethers, and are appreciated as gifts. I'll probably do these again
this year as Christmas gifts.
Easy Cheese Balls, recipe by Pam Wheat:
1 pkg. 8 oz Cream Cheese
8 oz. shredded cheese
(Note here: I've used a variety of cheeses as this is the main flavor of
the cheese ball. Havarti always went over best, but Muenster is good
too. Shredded cheddar is fine or Monterey jack for something richer, and
I can also purchase pre-shredded cheddar/jack mix, or even mozarella is
good. Gouda or another smokey cheese for that smokey flavor and adding a
bit of grated parmesan or romano is good too. Minced herbs can also be
added for an herbed cheese ball as can minced chives.)
1 cup of either chopped pecans or 1 small can of minced black or green
olives, or 2 small jars of minced pimentos, drained. If you cannot find
minced green olives, drain some salad olives well then mince by hand or
in a small food chopper.
Allow the cream cheese to soften at room temp and add the shredded
cheese to that and any herbs you may wish to add, mix well and form into
a ball, or a roll if you want to make a cheese log.
Take a piece of cardboard and cover with aluminum foil to use as a base.
Form the cheese ball or log onto that with a flattened bottom.
Take either chopped pecans, minced olives or pimentos and carefully pat
that over the ball or log to coat it.
Cover with plastic wrap and refrigerate.
Serve with a selection of crackers.
This is VERY quick and easy to make and better than any commercial
cheese ball or log I've have ever had!
