I've been on a hot wing kick lately as the are SO very easy and fast to
make in the Hamilton grill!
I like to oil treat the meat as, even tho' the grill is non-stick,
chicken tends to get gooey and stick a bit anyway.
The marinade tonight was made from:
1 cup of mild Pace picante sauce
1/4 cup grapeseed oil
1/4 cup EV olive oil
1/2 cup lemon juice
1/2 tbs. white pepper powder
Whisked together, this came out very thick. It was really more of a dunk
than a marinade.
White pepper is nice. It adds a pleasant heat to stuff without being
overwhelming.
I coated the thawed wing sections in that, placed them on the grill,
then sprinkled a little garlic powder, salt free lemon pepper and some
sesame seeds.
Closed the lid and grilled for 7 to 8 minutes.
This made 4 lbs. which will last maybe 2 days between me and my
housemate.
Pleasant, mild heat and a rich flavor.
