Michael \Dog3\ Lonergan
Okay, I seldom watch it anymore but Alton Brown had a dip episode and on it
was a lovely looking chicken liver mouse. I went to the website to get it
and the site is loading so slowly that I could take a nap before I get
where I want to be. Anyone know what is going on there or is the site just
being hammered with traffic due to Thanksgiving?

I'm having sporatic trouble, which I blame on my ISP. What episode is
this on? I'll post it for you if I can find it.

Never mind... it was easy to find

Chicken Liver Mousse
Recipe courtesy Alton Brown

2 tablespoons butter
2 cups chopped onion
1 cup chopped tart apple
1 teaspoon chopped fresh thyme leaves
1 pound chicken livers, cleaned
1/4 teaspoon ground white pepper
1/2 teaspoon salt
1/4 cup brandy
1 cup heavy cream

In a large saute pan over low heat, melt the butter and cook onion,
apple, and thyme, covered, until apples soften. Remove lid and
increase heat to medium add the livers and cook until firm and still
pink inside. Remove from the heat and allow to cool. Add the pepper,
salt, and brandy and puree in a food processor; then chill, covered.
Meanwhile whip the heavy cream to medium peaks. Fold into cooled,
pureed liver mixture. Serve chilled.

Thanks! I got the recipe. The other pages are loading very, very slowly for
me. None of my other sites are loading slow. It must be the servers I'm
hitting from St. Louis. Thanks again.

Thanks SF. Zip already gave me the link and I've downloaded the recipe.
The next thing I'm going to look for is Paula Deen's oyster dressing
recipe. I'll be damned if I'll put on hip boots and dig the clams myself ;)

The Food Network website is always very slow for me. Not just at
