Giggles
Hi all,

Today I had 2 friends over for coffee so I had homemamde scones, apple
muffins & jam & coffee of coarse. We had so much fun that we said we'd do
it again tomorrow. But now we're going to be 4 women and it's at my house
again & I'm stuck on what to make. They come over at 9am.

Any suggestions on what I can make?

All dirty jokes aside, I suggest that you serve coffee, homemade scones,
apple muffins, jam, and coffee. You said they had fun and wanted to do
it again; why futz with a winning combination?


Convinced that you have to do something different? O.K., then give them
herbal tea instead of coffee and banana or apricot bread that's been
baked in a loaf shape, then sliced. Serve with butter or cream cheese.

Pot luck is a great idea! If they're bakers too, have them bring something,
plus the recipe (might be too late for tomorrow, but maybe for next time).
Otherwise, how about spiced pumpkin bread:

This stuff is really yummy. It makes two loaves; you can halve the recipe,
or bake both loaves and freeze the second one (for a future gathering).
It's sooo good you won't need another baked item. Just add some sliced
fresh fall apples, maybe with a honey-yogurt dip, and coffee or tea.

And Roberta, I hope your little one feels better soon!

Aww Thanks :) It was a brief moment of self pity on a bad day.

She'll be ok - she's got a raging ear infection which throws off the
equilibrium (which in turn makes her throw up alot :P )

I like kili's quiche idea AND Dimitri's coffee cake idea. Some of you may
gag but I also like those breakfast casseroles you make the night before,
refrigerate and throw in the oven. I always jazz up the original recipe
and there is seldom any left over. Fresh fruit platters are always welcome,
regardless of the meal it is. Although fresh fruit in these parts is
getting scarce.

Michael <- favorite breakfast is corned/roast beef hash, 2 eggs over easy,
German style hash browns, a toasted bagel, coffee and tomato juice.

Hi Sue, here is a basic recipe but I build on it as I go:

East Park Inn Brunch Casserole from East Park Inn, Nashville TN

2 pounds breakfast sausage (I buy fresh bulk sausage, a little over 2lbs
is fine)
1/2 Cup of chopped green onions
1-2 Ounces of chopped pimientos (I buy them in the jar)
1 dozen slices of bread (I use 8 big pieces of Texas Toast bread)
6 eggs (I use 8-10)
3 Cups of whole milk
1/4 teaspoon dry mustard
1 tablespoon Worcestershire sauce

These are the basic ingredients. I always use at least 8 eggs. Also, I will
add some chopped mushroom and diced green pepper, any quantaties within
reason that you like. I *always* add a couple of cups of shredded cheese,
cheddar is my favorite. Not sharp cheddar.

Cook Sausage until crumbly, drain well
Add onions and pimientos and other optional ingredients (mushrooms, peppers
etc.)
Layer slices of bread (crusts removed and given to the birds) in a buttered
13X9 casserole dish that's at least 2' deep if not deeper depending on the
amount of extra ingredients used.
Beat together, eggs, milk, mustard and Worcestershire. Pour over casserole.
Refrigerat overnight.
Next day bake in oven at 350 for about 1 1/4 to 1 1/2 hours.

A quickbread is really easy. You can modify this one and add whatever you
want re flavoring, like chopped apple, dried fruit, nuts, etc.

LOW-FAT BANANA BREAD
Here, buttermilk replaces nearly all of the oil. Very ripe bananas give the
best flavor.

2 large eggs
3/4 cup sugar
1 cup smashed ripe bananas (about 3 medium)
1/3 cup buttermilk
1 tablespoon vegetable oil
1 tablespoon vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 325°F. Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with
flour. Using electric mixer; beat eggs and sugar in large bowl until thick
and light, about 5 minutes. Mix in smashed bananas, buttermilk, oil and
vanilla. Sift flour, baking powder, baking soda and salt over mixture; beat
until just blended. Transfer batter to prepared pan.

Bake bread until golden brown on top and tester inserted into center comes
out clean, about 1 hour. Turn bread out onto rack and cool.

Makes 1 loaf.

Heres a few suggestions.Palacsintak Barackizzel (apricot
pancakes)------------------------------------------------

to make 14 pancakes

3 eggs
1 cup milk
1/3 cup club soda (freshly opened)
1 cup sifted flour
3 tbs. granulated sugar
1/4 tsp. salt
1 tsp. vanilla extract

4 - 6 tbs. butter

3/4 cup apricot jam (or flavor of choice)

1 cup ground walnuts or filberts

powdered sugar

Beat the eggs lightly with the milk in a small bowl. Combine with the
club soda in a large mixing bowl. With a wooden spoon stir in the flour
and sugar, then add the salt and vanilla extract. Continue to stir
until the batter is smooth.

Melt 1 tsp. of butter in an 8 inch skillet, preferably a well seasoned
pancake skillet. When the foam subsides, ladle in enough batter to
cover the bottom of the skillet thinly and tilt the skillet from side to
side to spread it evenly.

Cook for 2 - 3 minutes, or until lightly browned on one side, then turn
and brown lightly on the other. When pancake is done, spread 2 tsp. of
jam over it, roll it loosely into a cylinder, then put in in a baking
dish in a 200 F oven to keep warm until the pancakes are finished. Add
butter to the skillet as needed. Serve warm as a dessert, sprinkled
with nuts and powdered sugar.

3 eggs separated

1/2 tsp. grated lemon peel

1/4 tsp. vanilla extract

1/2 cup sifted all purpose flour

Preheat the oven to 350 F. With a pastry bush or paper towel, butter
the bottom of a 9 inch layer cake pan. Pour the cherries into a sieve
or colander and let them drain while you prepare the batter.

In a mixing bowl, with a wire whisk or a rotary or electric beater, beat
the egg whites with the salt until they foam, then beat in the sugar, a
tbs. at a time. Continue to beat until the whites form stiff,
unwavering peaks when the beater is lifted from the bowl.

Beat the egg yolks lightly with a fork, then add the lemon peel, lemon
juice and vanilla extract. Mix about 1/4 of the beaten egg whites into
the egg yolks, then reverse the process and pour the yolk mixture over
the remaining whites and sprinkle the flour on top. With a rubber
spatula, fold until no traces of the whites remains. Do not over fold.

Pour the batter into the pan, and spread the cherries evenly over it.
Bake in the middle of the oven for 35 - 40 minutes or until the cake is
golden brown and springy to the touch. Cool in the pan before serving.

Chocolate mint figs
----------------------

1/2 cup mini semisweet chocolate chips

4 tbs. finely chopped fresh mint leaves

48 almonds, toasted and coarsely chopped

24 fresh mission figs, halved.

preheat oven to 350 F

In a small mixing bowl, combine the chocolate chips, mint and almonds,
stirring well. PRess a little of this mixture into each fig half.

Lightly spray or wipe a baking sheet with vegetable oil. Place the figs
on the baking sheet and bake for 15 minutes. Serve warm or at room
temperature.

If you're going to do this daily, you'd better streamline your menu!
Cream biscuits (make with cream, not milk) and jam would be very good.

If you want to outdo yourself, make biscotti.

Cooking At Jerry’s Diner

Easy Biscotti

Ingredients

* 3/4 C toasted almonds
* 1/4lb (1 stick) butter
* 3/4 C sugar
* 2 eggs
* 2 1/4 cup flour
* 1 1/2 tsp baking powder
* 1/4 tsp salt
* 2 T orange liquor & zest of orange/lemon

Steps

1. Cream butter & sugar.
2. Add eggs.
3. When smooth, add any orange zest/liquor.
4. Sift in flour, baking powder and salt.
5. Stir in the almonds.
6. On a floured board, divide dough in half and roll each half
into a long roll, about 1 1/2 inches by 10 inches.
7. Bake rolls at 350F for about 20-25 minutes.
8. Cool for 5 minutes.
9. Slice into 1/2 inch thick slices.
10. Lay the slices flat, then bake each side for 8-10 minutes.

Variations

* Dip in chocolate.
* Any amount of orange zest will add to the flavor, even if it
isn’t two tablespoons. Grate the orange skin off of an orange,
mix it into the dough, and then eat the orange. It’s good for
you.

Things like baked, stuffed french toast, or hash brown casserole or
strata. They are very good and always go over well, IME. I will be
making two pans of hash brown casserole, one with sausage, one without,
for brunch Thanksgiving.

Very ripe as in black and shriveled. The bananas almost create their own
liqueur. Fabulous in bread, but your family will think you are crazy for

Title: Sour Cream Coffee Cake
Categories: breads, breakfast
Yield: 12 servings

Filling:
1 c pecans; chopped, toasted
3/4 c golden brown sugar; packed
2 1/4 ts cinnamon; ground
Cake:
3 c flour
4 1/2 ts baking soda
4 1/2 ts baking powder
1/2 ts salt
1 1/2 c sugar
1 c butter; room temperature
3 lg eggs
2 ts vanilla extract
2 c sour cream
powdered sugar

For Filling: Mix all ingredients in medium bowl to blend. Set aside.

For Cake: Preheat oven to 375F. Butter and flour 12 C. Bundt pan.
Combine flour, baking soda, baking powder and salt in medium bowl; mix
well. Using electric mixer, beat sugar and butter in large bowl until
light and fluffy. Beat in eggs 1 at a time. Beat in vanilla. Stir in
flour mixture alternately with sour cream in 2 additions each,
stirring just until blended after each addition.

Pour 2 C. batter into prepared pan. Sprinkle with 3/4 C. filling.
Cover with 2 1/2 C. batter, then top with remaining filling. Cover
with remaining batter. Bake until tester inserted near center comes
out clean, about 1 hour. Cool in pan on rack 10 mins. Turn out onto
platter. Sprinkle with powdered sugar. Serve slightly warm or at room
temperature. (Can be made 1 day ahead. Cool. Cover with foil; store at
room temperature.)
