I'm having trouble finding any recipes I can use. I haven't had a
piece of bread in more than a year, and ALL of the gluten-free
cookbooks and companies use gum-based formulations.
Can anyone help me find a non-yeast, gluten free bread recipe that DOES
NOT contain some form of gum? Gum is a plant source allergy, and as
such, this may seem like an unusual place to post. However, the members
of your forum seem to have a diverse range of knowledge, and I'm hoping
someone might have a suggestion.
I've already tried every gluten-free company, organization, and
cookbook I can find. All of them rely on gum bases for their recipes.
People with this particular allergy have been left behind.

Not recipes, but I can point you to these links with gluten free
products if it helps. I found them just lately in a related article
about October having been Celaic awareness month. Celaic disease being
an'autoimmune disorder that's treated with a gluten-free diet.
Perhaps contacting them may get some free recipes too.

Thanks for responding. All of the gluten-free products I've found
contain gum as the principal ingredient. None of these companies
stopped to think about people who are allergic to gum.
If anyone can direct me to useful recipes I'd be grateful.

Thanks again for trying to assist.
I just checked the ingredient list for the products you mentioned. All
of them are nothing but a pure gum base with flavors added.
Again, if anyone else has suggestions, I'd welcome them.

That's good info. I wonder if dropping them a line regarding pure gum
might give them pause for thought in a new product line based on
non-gum products.

The buckwheat muffins are fantastic and as far as I know there are no gums
of any kind used,just a very clever use of an everyday ingredient ;-)

Cheez Whiz! That is a tough question. I've looked at Gluten-Free
products in the store and they all seem to have Guar Gum or Xanthan Gum.
I found a few recipes and included links below (they're not vegan
recipes but free of gluten and gum).
I think you might have to give the notion of sliced bread and learn to
like rice and such.
What is your reaction to Xanthum Gum and Guar Gum? One of my sisters
can't digest Guar Gum but is okay with Xanthum Gum.
Have you tried replacing Xanthum Gum with ground flax seed?
Perhaps you can list everything you can't have and I'll try to figure
out what there is out there for you.

Nancy,
This is my CAN list. These are ingredients I can work with.
Any ideas you've got would be appreciated. From what I can tell,
nobody has attempted to make a gluten free bread without using gum. I
know it can be done -- but nobody has attempted it yet.

There hasn't been activity in the thread for a while so I thought I'd
post again and see if anyone had any luck finding recipes. I'm still
hoping to enjoy bread during the holidays.
