This shortbread is plain to look at but buttery heaven to eat. With
only three ingredients, it's the easiest gourmet cookie to make.

Cream 1 cup butter with 1/2 cup powdered sugar. Knead in 2 cups flour.
Pat out on a cookie sheet to about 1/2 inch thick. Chill half an hour.
Bake 5 minutes at 375 degrees, then reduce heat to 300 degrees and
continue baking for 45 minutes more until golden brown. Cut with a
sharp knife into squares or diamond shapes. Make a cup of tea to enjoy
while you eat up all the trimmed-off edges. Mmmmm...

Dear daughter and her husband spent Thanksgiving in Hawaii.
Among other things, they brought back coffee flavored shortbread
cookies with chocolate glaze/icing. Omigod they were good!
I might try that variation with your recipe.

Funny you should have posted the shortbread recipe today. I am
planning to make shortbread tomorrow. My recipe is similar, also very
plain to look at but so delicious to eat.


250g butter
1 cup icing sugar (powdered sugar)
1 cup cornflour (cornstarch)
2 cups flour

Cream butter and icing sugar till light and fluffy. Sift cornflour and
flour together. Mix sifted ingredients into creamed ingredients. Knead
well. Roll out to 1.5cm thickness. Shape as desired. Place on greased
oven tray (cookie sheet). Prick with a fork. (I prick each piece three
times, it also makes a pattern). Bake at 150C for 30 minutes or until
pale golden (it's very pale looking).
Makes about 30
